All of our dining venues are designated Ocean Friendly Restaurants by Surfrider Kauaʻi, an organization dedicated to ocean and marine life conservation.

Our signature restaurant, founded on plant-forward, hyper-local and sustainably sourced cuisine from the island and its surrounding waters. Led by nature, 1 Kitchen’s menu is highly seasonal, featuring the best ingredients from Kauaʻi’s farmers, ranchers, fishers, and growers.

A poolside, ocean-facing retreat with sweeping views of Hanalei Bay and a menu of locally sourced, classic Hawaiian beach fare. A perfect gathering spot for families to gather, lounge, share a meal and take a dip in the pool.

Featuring the perfect poolside bites like poke bowls, fish tacos, burgers on locally baked bread, a wood-burning pizza oven, and keiki menu (for your minis). Beverages are designed for poolside lounging, with craft cocktails made from 50+ agave spirits, frozen drinks, locally sourced beer, cider, kombuchas, and low-ABV seltzer.

Neighbors Café

Our café, market and communal gathering spot for guests and locals. Catch up with cold-pressed juices, kombucha and wellness shots from our friends at Kauaʻi Juice Co., recharge with barista-brewed local coffee from Hanalei Coffee Roasters or linger over a nutrient-rich breakfast of chia parfaits, overnight oats, housemade pastries, sustainable salads.

For guests or locals on the go, skip the line with our on-the-go ordering and enjoy refreshing coconut water, tea, kombuchas, açaí bowls, sandwiches and gelato from our sweet friends at Papalani Gelato in Poʻipū to take with you wherever you wander.

Meet Our Culinary Team

Chef Daniel

Chef Daniel Palumbo

For over 20 years, Daniel Palumbo has held top culinary roles at prestigious establishments. Currently, as executive chef at 1 Hotel Hanalei Bay on Kaua‘i’s North Shore, he oversees six dining outlets in collaboration with local producers. Previously, he was the executive chef at The Lotos Club in New York and at Soros Fund Management. Chef Daniel began his career in the U.S. Army, trained at the Culinary Institute of America, and held positions at Michelin-star restaurants in New York. He later worked at luxury hotels, including The Plaza and Lotte New York Palace. Passionate about food and community, Chef Daniel aims to support local food producers and educational partnerships.
